fav eat…cobia hands down specially sashimi style
for snapper and grouper i use about an eigth inch of water, lemon juice (squeezed) and pepper I cover it and steam it till its light and flakey and not over cooked. then I add a touch of lemon soy sauce or an orange sauce and cover for 20 seconds then take it out and eat it….

amberjack is good grilled I use butter garlic and lemon with pepper to taste.

I rarely eat it fried but when I do well thats the best secret recipe of em all…roll out ritz crackers with a rolling pin or grind them up in a food processor. make a batter of egg white and just a little milk, dip then roll in ritz crackers…garlic and pepper to taste, cook in peanut oil (dont over cook it) dry it on a paper towel and serve with wahtever sauce you like
